12  /  the tasting panel  / january-february 2016 INDUSTRY SPOTLIGHT Island Wine O n the island of Maui, Kapalua Wine & Food Festival will celebrate its 35th annual event June 9–12, 2016 and announced celebrity chef Hugh Acheson will be one of the featured guest chefs at the event. Hugh Acheson is the author of the James Beard Award Winning cookbook A New Turn in the South: Southern Flavors Reinvented for Your Kitchen and is chef/owner of the Athens, Georgia restaurants 5 & 10 and The National; the Atlanta restaurant Empire State South; and coffee shop Spiller Park Coffee; and the Savannah restaurant The Florence. The 2016 Festival will feature interactive wine panels that will focus on international winemakers and regions, including Australia and Spain. Other notable panels will be "Women in Wine," "Scions of Family Wineries" and "Globetrotting Winemakers." Tickets are on sale at www.kapaluawineandfoodfestival.com. The custom of clinking glasses came from medi- eval times when alcohol was believed to harbor evil spirits. Clinking the glasses caused these demons to be expelled from the liquid. Wine is often called the nectar of the gods, but Sangiovese is the only grape named after a god. Sangiovese means "blood of Jove." Egg whites, bull's blood and gelatin have all been used as fining agents to remove suspended particles from wine before bottling.
