The Raspberry Mojito and classic Mai Tai, Four Seasons Maui. "What people want in their cocktail glass is a true taste of Maui," says Byron Chong, F&B Director at the Four Seasons Maui. "And local means fresh." That defi nes the approach to cocktail concoction not only at the glamorous AAA Five Diamond resort (where cocktails are actually referred to as "tropicals"), but throughout much of Wailea itself, the ritzy, sexy southern stretch of balmy beach on Hawaii's Valley Isle. This is where drinks are the stuff of tropical inspiration. Sippers are vibrant—think bright island pinks, blues and yellows—and serve up a rush of fruit with every swig. The Wailea cocktail scene has also become good business, attracting sandals-sporting sight- seers to the beachside bars and lounges-with-a-view at the area's top resorts as much as the neighboring restaurants, golf courses and spas.
