36  /  the tasting panel  /  september 2015 A Conversation with Joshua Plack WINE DIRECTOR, MARTIS CAMP, TRUCKEE, CA photos by Karen Jones Fred Dame: This is an absolutely magnificent property at Lake Tahoe. I dined here last night and the chef, and notably the pastry chef, did an incredible job. The wine pairings were superb as well—my compliments. How did you get here? Joshua Plack: I worked my way up, starting here in Lake Tahoe for seven years after college, and then continuing as a server at Alan Wong's in Honolulu. I returned to Lake Tahoe to, well, ski, and worked locally for three more years before starting at Martis Camp as the restaurant manager in the Family Barn. Martis Camp is a wonderful place, so I continued to study wine and service, eventually rising to my current position as Wine Director and Dining Room Manager at the Camp Lodge. Fred Dame, MS (left) is VP/Prestige Accounts for American Wine & Spirits (a division of SWS of CA). He speaks here with Martis Camp Wine Director Joshua Plack at the club's Camp Lodge.
