Velvet Falernum ◗ 2 dashes of Bittermen's Orchard Street Celery Shrub ◗ Sprig of dill ◗ Edible flowers Shake all ingredients with dill removed from sprig and ice and double strain into a cocktail glass. St-Germain ◗ ½ oz. fresh lemon juice ◗ ¼ oz. simple syrup ◗ 3-inch rosemary sprig ◗ Lemon Add all ingredients into Boston shaker. Add ice and shake vigorously for 10 seconds, then strain and sieve into a Martini glass. Garnish with a thin lemon wheel with a small sprig of rosemary piercing through middle of lemon wheel placed floating on top of cocktail. Broker's London Dry Gin ◗ 1 oz. fresh lemon juice ◗ 1 oz. black peppercorn syrup ◗ 1 oz. cream ◗ 1 ginger-infused egg white ◗ 3 blackberries plus 1 for garnish ◗ 1 oz. ginger beer Muddle blackberries in mixing glass. Combine the rest of the ingredients, except the ginger beer, in the mixing glass. Reverse shake vigorously and pour into a Collins glass. Set foam puck by gently tapping the glass on bar top. Slowly pour ginger beer into the glass until the foam rises slightly above glass level. Garnish with blackberry.
