Gianpaolo Paterlini: (laughing) Fred, I'm sure my parents do. Acquarello just got its second Michelin star. Your father, Giancarlo Paterlini and Chef Suzette Gresham must be ecstatic. You have that wonderful list of wines there—2,000 on the wine list. Then you go around the corner and open a completely different concept. But my feeling is that you are celebrating the old and the new! Acquerello has a classic look and menu. Here we have a wide-open dining room, modern décor and a smaller menu of unique items that suit the wine list . . . which, by the way offers, just over 200 wines.
