Following the panelists' talk, our third day was rounded out by a "library" tast - ing of Paso Robles Cabernet Sauvignons, followed by dinner (main course: whole roasted suckling pig) at JUSTIN Vineyards & Winery—in the words of Stacie Hunt, a "totally idyllic conclusion to the CAB Camp, right down to the sunlight filtered through soft, beautiful particles of sunset." Reflecting back on the three days devoted to learning about Paso Robles, Sommelier Anthony Lerner tells us, "The organization of CAB Camp as a terroir experience definitely surpassed my expec - tations. The commonality of calcareous soils in the nor th and variance of Monterey shale in the south really helped to give an understanding of the land, and why it cre- ates Cabernet in the style it does." While what impressed Nadia Pavlevska was "the level of experience and exper- tise, passion and determination of the Paso Robles winemakers," she also shared an appreciation for the opportunity to meet "an amazing group of sommeliers . . . like-minded people to share this experi - ence with." Aaron Thun of San Diego's University Club summarizes it: "What will benefit me as a sommelier is just knowing that this place is a sleeping giant. The best wine trip I've been on in years!"
