WINEMAKER PROFILE Scharffenberger Cellars winemaker Tex Sawyer. Over-Delivering on Quality Sawyer describes the difference between Scharffenberger and Roederer Estate as the difference between eating an apple and eating apple pie. "The wines are constructed the same way, with the same attention to balance," he said. "Quality is equal across the board with Scharffenberger working in synergy with Roederer, which is differentiated by cask aging for multivintage wines. The stylistic differences provide consumers and the trade with more options." Sparkling wine sales in the U.S. have achieved their highest level since 1987, and even though much of that growth is attributed to Moscato-based sparklers, the category has been keeping pace with overall wine consumption and consumer interest is strong. "There are a lot of good sparklers out there and you must over-deliver on quality for value in order to compete," notes Sawyer, who says that Scharffenberger makes a conscious effort to go head-to-head with brands that are more entrenched. "We do have a competitive advantage in that we can price our brand very strategically in a category of wines that are well-rated." Of the company's flagship Brut, a blend of 60% Chardonnay and 40% Pinot Noir that spends two years on the lees, Sawyer says, "Imagine a fruit tart with a pastry base and vanilla filling topped with peaches and strawberries." Sawyer's rosé sparkler mirrors the fruit-forward flavors of the Brut "but with a handful of raspberries thrown in." When it comes to introducing new wines—there's a crément in development—he works towards consistency and keeps several different vintages on hand at the winery to establish palate profiles and to create blends. Brand Loyalty Authenticity has served the brand well, and a loyal following of consumers make the tasting room in Philo a destination. "The road in helps keep the rural lifestyle we enjoy in Anderson Valley intact, but more and more people make the effort to come to us." The brand's wine club and the number of visitors to the winery continue to grow. Tex Sawyer's unique experience of working with several of the world's leading champagne houses to make sparkling wine for the domestic market has been a win-win for consumers, as evidenced by their enthusiasm for the wine style. Scharffenberger does sell its still wines in the tasting room, and Sawyer even makes a little red wine at home each year to keep his wife's Italian family traditions alive. Beyond his passion for wine, Sawyer enjoys surfing, is actively involved in the community and has a soft spot for making limoncello.
